If it came down to it (I know it's blasphemy(?)), but we were all down to non bullet projecting weapons...what would be your weapon of choice?

For going to a fight, a bow. Ideally, a compact compound bow with around 50# draw, but anything would do in a pinch.
For personal defense, any one of a number of sharp pointy things. A good solid quarterstaff or spear would be even better, assuming I could get away with walking around with it.

Well my SoCal friend, neither a bow nor a crossbow can be easily carried without drawing tons of attention. (Obviously)
I would carry my Monadnock Autolock daily for personal protection, (along with a few nice sharp things) then try to become proficient with a bow/crossbow for the home and other "social" situations, but my favorite would be this:

Sword: Everest Katana (already got)
Shortsword/indoor weapon: HI Khukuri, 21" "skinnybeast" (unusual type, skinnier than a Sirupati, built as a fighter by a visiting Kami and hence basically unclassifiable. Very similar to the original Greek shortsword the Khukuris are derived from, based on what Alexander's boys blew through with about 2,300 years back).
Knives: covered :D.
Projectile: ain't got yet, but an over/under double crossbow sounds good. With a Red Dot sight :D.

Tamara, the "oxygen" part was funny, especially if one has been around long enough to realize you have more firearms than oxygen, and not just by weight but also by volume. But the "uninvent" part suggested the question was silly, especially coming from a moderator to a newby (as perhaps demonstrated by the "fantasy world" comment of the next poster). I guess I'm just accustomed to your normal high standards, and I think they slipped here. Anyway, we can agree on the helium.:)

Bow and Crossbow for long range encounters at home, or from in car (crossbow). Backed up with a nice machete/short sword in the home.
On the street, a shoulder rig with a big (7" or 8" blade) fighter under my right arm for right hand draw, and an Applegate/Fairbairn dagger under my left for left hand or emergency right hand draw. Folders in pockets.
In warmer weather, a 6" or 7" fighter IWB, strong side (for edge in reverse grip draw), and on the left side something like a Kerambit, or the small A/F boot dagger.
In real warm (shorts and hawaian shirts) weather, IWB Kerambit, and a neck knife.
And always, folders in pockets.
I already live in a world that doesnt allow me to carry guns, being under-age, so this is nothing new. Altho the bow stuff is going with the fantasy, hah.

Recurve bow because I have some experience with that. Benchmade folder. Ka-Bar fighting knife.
Based on Last of the Mohicans and The Patriot a good tomahawk looks like a definite asset.

I suppose I'd just have to take a few escrima classes. After that, I'd just have to scour the countryside looking for a 2-4' stick...given the rarity of such. ;)
Then again, I suppose being a sneaky bastid to start with isn't much of a hindrance.

Maybe you'd leave your underwater dart gun w/ explosive charge shark tipped thingy, ready to go by the bedside.

Altho' walking around in a wet suit w/ flippers on could attract some unwarranted attention and slow you down a might. Unless you were on your way to the water. :D
A tomahawk or framing hatchet can be swung with fierce determination in a room, even in a hall with some practice.

Throwing stars are handy. I like 'em somewhat on the large size.
I notice nobody has mentioned slings? Ammo is easy to come by as are the slings themselves. Incredible forces are generated. Fairly accurate, easily concealed, and lots of fun with a bit of practice.

A sword cane with a folded steel core and a tungsten-carbide edge. It would need to parry effectively up to Aluminium baseball bat heft. The cane itself should be a decent heavier wood (treated Madagascar ebony or similar); the better to deflect incoming blows. The cane should be able to be stepped on by me (weight 450-500 depending upon which buffet I've hit recently) and not show any bend, kink, or blemish.
That should do for me...

I would have liked a few more qualificatiions: self-defense, vs. hunting for example.
If it was an outdoor survival situation, I would vote for an atlatl. They're easy to make, materials to make them are everywhere, and with practice they are deadly (just ask any mastodon you can find what s/he thinks about them). They worked really well for about 18,000 years on larger and meaner game than exist anywhere on earth today.
