There are few mentioned here:

In late May 2002, an Israeli teacher shot a suicide terrorist before he could harm anyone.
On May 31, 2002, as reported by Israel National News, a terrorist threw a grenade and began shooting at a kindergarten in Shavei Shomron. Then, instead of closing in on the children, he abruptly fled the kindergarten and began shooting up the nearby neighborhood. Apparently he realized that the kindergarten was sure to have armed adults, and that he could not stay at the school long enough to make sure he actually murdered someone.
Unfortunately for the terrorist, “David Elbaz, owner of the local mini-market, gave chase and killed him with gunshots. In addition to several grenades and the weapon the terrorist carried on him, security sweeps revealed several explosive devices that he had intended to detonate during the thwarted attack.”

He was not a CCW permit holder and I believe technically he was violating a law or two at the time.
But the principle of the high school in Pearl Miss. stopped that attack with a gun retrieved from his car.
Don't know if that helps, but there you are

Armed Citizen (http://www.armed-citizens.com/news/armdcitz_news.php?newsid=968&doit=yes)
Lott pointed to a January 2003 attack at Virginia's Appalachian Law School in which Peter Odighizuwa, a disgruntled student, allegedly shot and killed the school's dean, a professor and a fellow student on campus before being subdued by two armed students.
Upon hearing gunfire, students Mikael Gross and Tracy Bridges ran to their vehicles, retrieved their handguns, returned and pointed them at Odighizuwa. They then ordered the attacker to drop his gun, which he did, and students then tackled the disarmed gunman and, after a short scuffle, restrained him until police arrived several minutes later.
"If you do a ... computerized search of news stories around the country, you'll find in the one week after the attack well over 200 separate stories about the incident," Lott said. "However, only four mention the students having a gun in any way, and only two of those four mention that the students actually used their guns to stop the attack."
The Washington Post, for example, wrote that: "students pounced on the gunman and held him until help arrived." New York's Newsday explained that: "The attacker was restrained by the students." Other accounts erroneously reported that: "students tackled the man while he was still armed."

You may be thinking of the shooting at Appalachian Law School. In that one, two students (off duty cops, I believe) had to leave campus to get to their guns, but when they came back, the shooter surrendered to them.
Try this site -- Lott speaks of it.

And this one too.

Also, if you Google "Appalachian Law School", you will probably find more than you need to know about that incident.
Hope this helps.

The virginia case is the first one that came to mind when I read this thread. I read somewhere that the students were also off duty cops. Does anybody know if there's any truth to that?

There was a shooting at the high school in Pearl, MS (Jackson suburb) in 1995 or 1996. A principal ran to his car(parked off school property per law), retrieved a pistol, and held the shooter for authorities.
I don't know if he had a CCW or not.
A google of Pearl school shooting should bring it up.
