Went to a turkey shoot tonight benefiting a local church and managed to win a turkey after only three shots with an 11-87 that I recently purchased used for a good price. The gun came with the standard three chokes plus it had a turkey full choke. The turkey choke says for lead shot only. Why is this and what will happen if steel shot is used?

It's too tight for steel shot. Steel will peen it.

You don't need that for steel shot anyhow. Steel usually patterns at least one choke size tighter than the comparable pattern with lead. For example, shooting steel out of a modified chocke will often pattern like lead out of full choke.
