The canvas micarta VZ grips are thinner then traditional wood stocks. I put a set on my new Springfield. Love them.

Navradex makes a thin grip grip for 1911 - Micarta - Look in www.brownells.com

Another vote for the AlumaGrips.
I have a standard thickness pair and love them.
NOTE: Be advised that the use of thinner than standard grips quite often necessitates the replacement of the standard grip screw bushing with ones specially made for thinner grips. Brownells and AlumaGrips have them in stock.

Navidrex makes some slim ones in micarta as previously mentioned. Also, the slimmest you are likely to find would be the AFS Tech, although these are rosewood panels.

These beauties of mine are wearing Alumagrips, specifically the Tactical Checkered (half-smooth, half-checkered) in slimline thickness (they both now use slimline grip screw bushings) in color black (duh) and cut for the Bobtail grip:

Chip McCormick also offers slim grips in wood for both full aize and O-model 1911's.
