Which .40 - CZ75, P226 or Beretta 96?

They all only hold 10. I guess it comes down to which manual of arms I want, but I'm still having a hard time deciding.

Well, if you get a 75BD or 96G, they end up having the same manual of arms. I think DA/SA with decock only IS the best option, by the way. It's simple and safe and never leaves you trying to fire and being stopped by a safety. In order of preference:
Of the three, the CZ75 is going to be the toughest (steel frame, Browning lockup), and possibly the most accurate. If you wanted cocked and locked for IDPA or something, the CZ75B will do that, but still offer DA carry. A bargain.
The 226 is a great gun, but has an alloy frame. With .40 recoil and ALOT of shooting, this may be a factor. Best DA trigger of the three. Biggest price.
The 92 was not a particularly strong action before they stuffed a .40 barrel in it for the 96. You may go through locking blocks kind of quick (10,000 rounds or so?). The Brigadier version slide may mitigate that, somewhat. The G version is rare, except in the Elite II, which costs like the Sig. The FS is a decock/safety. The gun is generally huge in all dimensions. The new Vertec has a smaller backstrap, but is still huge overall.
All of these guns are essentially retrofitted 9mm pistols, which is not my favorite way of doing business. I would think the super tough CZ would have made the transition easiest.

the cz has the lowest boreline, in relation to your hand, and should have the least muzzle flip. it also has the option of condition 1 carry...if you like cocked and locked.
the sig has a high bore line but is known for it's accuracy...mags are a bit pricy
the beretta is the smoothest running of the three (non-tilting barrel), a slide mounted safety (or not, depending on the model) and a very nice trigger. it is the softest shooting .40 i have handled.
my choice was the 96 for a duty gun. the cz lacked the firing pin block that my department required and the 226 in .40 wasn't out yet...co-worker has one and it is very nice.

The CZ-75B and BD have firing pin blocks.

I have a Beretta 96 FS, and I have been very pleased with it.
It does have the safety/decocker, but personally I prefer to leave it off, and I have gotten in the habit of making sure it is off when drawing the weapon. It is a very accurate gun and has held up well.

My CZ 75B is one of the most highly accurate and reliable handguns I currently own. Very pleasant to shoot. I've shot all of the above at one time or another, but purchased the .40 S&W CZ 75B. And the 9mm CZ 75 BD. And the .22 CZ 75 Kadet.
