For hunting ~100lb Bambi within 125 yards - Hornady XTP 180gr, 200gr, or 240gr? Does it really matter for smallish-sized deer?

Doesn't matter, what does matter is placing the bullet accurately. I like full penetration so I get an exit hole so I would prefer the heavier bullet.

I killed my 1st handgun buck (and a big one) with my 44 mag. 240 gr. Magtech pushed by 10gr of Unique. Not a powerhouse load, but made that deer decisively dead almost instantly. I've since loaded up some 240 gr XTP's with the same formula but have as yet to try them. No doubt, any of those bullets would work on a small deer though.
