Is there anything I can do to the inside of a new leather holster to keep it from scratching up my gun so much?

Not really.

The common advice is to apply some sort of leather dressing or treatment to the leather.

In fact, this only softens the leather causing it to make MORE contact over a wider area, causing more wear.
It also causes dirt and grit to stick to the leather, converting the inside of the holster to an abrasive surface.

If you don't want a worn finish, either go with stainless or hard chrome, or don't put the gun in a holster.

This sometimes works:

Wet a paper towel and use it to SLIGHTLY dampen the inside of the holster. Then run the gun in and out about 15 to 20 times. This will burnish the leather where the gun is rubbing and make it smoother. Of course it will do nothing where the metal doesn't touch leather. Don't overdo the wetting part. You only have to slightly dampen the fibers on the inside. When you are done wipe off the gun so that it won't rust, and set the holster aside to dry - at least overnight.
