I would have to say that mine is my Finn M-39 Mosin-Nagant.
My reason?
Just because...:D

My H&K SL8-1/G36 clone...
Why? Well, because it looks so  ..
Or, it could be the fact that I'm currently going through my "black plastic" phase of life.

Hmmm, good question. There are many good ones out there, however to narrow it down, I prefer semi-auto rifles. I've owned a Garand and used an M-14 once which I also fell in love with. I think the Garand for it's smoother lines, caliber, reload quickness and nostalgia value.
However, at this time my only long range/hunting rifle is a Remington 700 with 3X9 Redfield in .30-06. My fun/shtf gun is the SLR-95 (Bulgarian AK-47 variant, milled receiver).
I still crave for a good Garand though.

That's easy- Springfield Armory M1A "Loaded" with synthetic stock.
It's very accurate, absolutely reliable (knock on wood). Shoots a readily available NATO caliber, simple to dissamble and clean.
Just wish Hi cap mags weren't so expensive for it.

It kind of comes and goes. I have a Winchester Coyote in 243 that I like a lot and a Remington 700ADL in 270 that's so versatile I can't help but like it a lot but currently my favorite is my 1988 Ruger Model 77 in 25-06. I got an excellent deal on it (about $110 after selling the scope it came with) which always helps in the opinion category and it has decent glass on it. The metal is perfectly nice and just slightly worn around the crown but the stock is banged up in a couple places. The bolt and safety are just perfectly smooth. It's not been bedded but I relieved the stock around the barrel and had a local guy tune the trigger to just over 2 lbs and no creep - it came out very nice. The rifle is just the right weight - 8.8lbs with scope but no rounds, heavier than a 700ADL but not as heavy as a heavy barrel rifle. Just enough to calm the recoil of the 25-06 down to where you can comfortably put 50 rounds through it.
I have a friend of mine loads up some ammo with the 117 Gr Hornady SSTs that he worked up a load for in my rifle. They're pretty gosh darn accurate and should be effective on most any game you're likely to see in Indiana. I've only taken crows and racoons and they certainly worked in either capacity. The only other game I ever hunt is coyote and I just haven't been able to take any so far.
I always prefered Winchesters (and certainly liked Remingtons) until I got this one... Now I'm pretty sold on Rugers until I can get a Sako or two. They just seem more solid somehow. I've been thinking of stripping and refinishing the stock in a transparent black for a bit more tacticality. Or I may just get a Boyd JRS stock.

US Rifle Cal .30 M-1 Popularly known as 'The Garand'
Good balance, for me [your mileage will vary] 8 rounds of .30-06, fast to reload with en-block clips, heavy enough and gas operation soaks up some of the "kick"

The .223 Sako Model 75 in that is my walking around varmint rifle.
The reasons are because it is very accurate for a light sporter, the detachable magazine holds six rounds and can be top loaded, the bolt is locked when the safety is on but the action release permits the bolt to be opened without having to release the safety. The Sako action is scaled to the cartridge unlike most other manufacturers who use a larger .308 sized action for the .223 cartridges. The stock is a nicely-figured piece of light colored walnut and the rifle is light enough to carry but has enough mass to hold steady off hand.
On top is a Bausch and Lomb Elite 4000 1.5x-6x set in Sako rings although I've been considering replacing the Sako rings with a set of Warnes. Sako rings are very well made but unnecessarily heavy IMHO.

M1 Garand.
Reasons: I love the .30-06, it has very manageable recoil (compared to my 7mm mag. it's a kitten), it's built like a tank compared to some other military style weapons, the HISTORY behind it, it hits where I point it, and above all it's just downright fun to shoot. :D

I'll be different.
I like my Mosin-Nagant 1938. She's accurate enough (very much so), and I just refinished the stock (stained and Tru-Oil). I wish I had a digital camera.

"the M1 is the greatest battle implement ever devised" - Patton
I have to agree. At the time, it was the greatest rifle in military use, bar none. :)
It's just simply a beautiful rifle that stands alone. There are some rifles that are similar, but none is quite what the M1 Garand is.

Your question was too broad and would cover too many types of rifles and actions made for many types of purposes.
Here are a few world standards for various purposes
M98 Mauser. World standard Best bolt action rifle ever designed for the military or for the rugged demands of big game hunting.
AK47- Word standard of the assault rifles.
Anschutz: World standard of .22 target rifles

My current favorite is a Savage Model 93 in .17 HMR. Makes me look like a serious marksman at the range and is my most frequent small game companion.
But, the Savage is occasionally displaced by my trusty Bushmaster shorty which I have loved since first buying it.
Still this fall I hope to be swooned by my Winchester Model 70 in 30 06 as I search for Elk.

It varies.
For hunting big game, my trusty ol' Winchester 670 in .30-06. I still can't believe this old workhorse is a sub MOA rifle when I'm having a good day. (The best group I ever got with this rifle was a .75" four-shot group with plain-Jane factory Remington ammo.) I bought it for under $200 new, IIRC, back in 1978, when I was nearly 19.
For centerfire plinking fun, the Ishapore Enfield in .308--it's accurate, powerful, and a hoot to shoot. The Ishy is closely trailed by my dad's Marlin .30-30, more or less on permanent loan to me.
And, of course, my old Winchester 290 .22 fills the rimfire niche. Bought in 1974 when I was 14, it is still accurate enough to hit a spent shotgun shell at 30 yards. Together, we've taken dozens of cottontail rabbits. With a little luck, we'll take a few more before it's all over.

Your question was understood perfectly by some of us... :D
Here's my World Class answer to your question:
Remington 700 BDL 7mm Rem.Mag.
It was my first bolt-action hunting rifle.
It put a great BIG $hit eatin' grin on my face the first time I fired it!

All kidding aside, this is truly my favorite long gun.

Mine is a Marlin 336C in .35 Rem. topped with a Burris 3X9 Scope.
Why, you may ask?
First, it belonged to a very good friend's father(who has since passed on). He took a LOT of deer with it. I've "known" the gun for a long time.
Second, it is accurate. 1-1/2 to 2" groups a 100 yds with Core lokt ammo from the bench.
In addition, it is light, durable, has a smooth action and still has a crisp trigger after all those years and rounds sent downrange.
Only drawback is--- it's not very "tactical". :D

M38 Swedish Mauser my father gave me. He bought it for $ 50 Canadian in '81, looking brand new, and it was one of the first rifles I ever shot (Dad was not into .22's at the time). He sold it to my uncle, who I begged with to get her back (gave him a wood stove for it). I re-prurchased it for sentimental purposes, but the bugger will shoot .6 " groups at 100 yards so she is well worth the loss of the stove.

My 1903 25-06 I (with the help of a couple of great gunsmiths) built about 16-18 years ago. Brand new nickle steel action, Douglas barrel, French walnut stock, polishing and engine turning in just the right places, Weaver Wideview 3x9.
I built it because I like the 1903 action and I like the 25-06. I never meant to shoot it much, but just this winter, I've killed 1 pronghorn and 2 coyotes with it, from 300 to 450 yards.
Oh, and of course, my Garand and .30 Carbine (gifts from my wife). ;)

HK-91, and I wish I didn't get looks on the range.
It's as accurate as I am with a scope. It has good iron sights. Tough and reliable. Plenty of crap to hang off of it, but works/looks good on it's own. Fires cheap surplus, hunting softpoints or match ammo. From the shoulder, doesn't kick much more than a .223.
While I have two other rifles (and lust for more), it would be easy to go back to just this one. I've hunted with it, shot it for speed, targets, etc. I'd take it to war if I needed a rifle.

Savage 116 fsak weather warrior in 30-06. I've killed more game with a Savage rifle than I can count easily.
Second would be a Marlin 336in 30-30, or a Remington 760 Pump gun in 30-06. I've hunted with both of them and have supreme confidence in their reliability and accuracy.
Always had a soft spot for the M1a though I never owned one.

Why not?
You know, that could be easily corrected...:D
It just seems that every time I walk into a gun shop, I get a little poorer.
I went to town today with no intention of buying anything, and ended up with reloading stuff.

On the bright side, we did stumble onto two unused HP hi-caps for $10 each in the used magazine bin. They are mec-gars, so you can't do much better than that.:p

Goon, I'm just not. I'm way into the application of them, but I've finally come to the realization that guns themselves don't "turn me on." IOW, I don't buy a gun just to have another type of gun. I buy it for a specific purpose. If that need goes away, the gun typically leaves soon afterwards. I'll never be a "collector." The voice in my head always screams, "But what can you DO with it??!!!"

Goon, I'm just not. I'm way into the application of them, but I've finally come to the realization that guns themselves don't "turn me on."
I am sort of coming to that one as well. I have bought several guns in my life that have no practical application. I have recently gotten into C&R because many of the guns are so tough, and durable, and they are cheap to shoot.
So I come across the Finn M-39 on another board in the for sale section. I had wanted a Mosin Nagant for awhile, so I bought it.
I am so glad that I did.
It may very well replace all but one of my other centerfire rifles (my scout). The quality is far beyond my new Remington 700, and I now find myself wondering why I bought the Remington in the first place when I already had the Finn.
I can hit clay pigeons with the M-39 shooting offhand without a sling at 100 yds. That my seem so-so to some of you, but it is pretty good for me.
That is why it is my favorite.
The perfect blend of quality, style, accuracy, power, and the ever so popular "what the hell is that?" factor.
