Go to police supply websites, and look at their in-car shotgun locks. My HD Remington 870 sits in one of those locks, which has a key "backup" to the electronic lock. Nothing says you have to hook the wires up to anything. I just use the key.

Has advantages of being purely mechanical (no batteries to fail), has no key to lose, and can be opened by feel in the dark.
Has disadvantages of needing separate wall mounted pegs to support a long-arm, and is relatively easy for someone who knows what they are doing to pick it open.
(Let’s not increase the number of people who know what they are doing by posting any detail on how to pick locks.)

There's always the old "big eye screw into a stud and padlocked through the action" trick. Do it close to a corner so it can't be unscrewed.

Someone posted a link here a month or so ago for a mount/lock that could be opened with a code. It was on sale for about $35.

I wish I could find it, but my google-fu is not that strong today.
