Could carrying my wife's gun get me into any trouble, say if I got pulled over and the officer checked the SN, or if I had to use the weapon in a self-defense scenario?

Totally depends on where you are.
Who has the permits and does your state require registration (like CA).
In CA, if you have a permit, your CCW gun has to be on the permit. Not sure what happens if you carry a gun not on your permit - possibly have your permit yanked.
In a state like FL or TX, the permit allows about any handgun and in FL, its actually a weapon license - you can carry an ASP, knife, club, etc...

Yes, carrying a firearm not on your permit is grounds for revocation of the permit. But then again, they do let you list up to four different handguns on the permit. My daily carry is a Glock 30, but if for some reason the Glock is in the shop or something, I have options.

Can't do it in Michigan, it's illegal to loan a pistol to anybody:banghead:

You cant really "loan" a handgun to people here (for more than 30 days and they have to have the safety card)
However, when you are married, all your stuff is owned by both of you - so unless your spouse is a felon, I cannot see it being illegal for you to share a gun - barring some restriction on the permit that limits you to certain weapons...

I asked the same question when I received my Colorado permit to carry concealed hand guns. It covers any hand gun, but only hand guns, not rifles, shotguns, knives, et cetera. I think it varies a lot from state to state.
