Scout scoping with both rings on one side of the scope. Stable?

I'm planning on scouting an SKS....but no permanent mods. Using a base from www.scoutscopes.com and looking for a 2x to 4x that does not hang over the bolt so far that it gets hammered by brass. Any scope suggestions or can you get a stable mount using both rings on one side of the scope?

Advice from the pros is appreciated.
