8x57 is a good elk cartridge, use a well constructed bullet like Barnes, Nosler and others make. Just behind the shoulder and about 4-6" inches above the breast is a good place to put the bullet.
I don't know about Colorado but southern New Mexico is closer:)

Go to the Colorado Dept of Wildlfe web site here.

There is a ton of information, the Game Management Unit maps as well as the harvest statistics are there. You can look at the places with the most elk and the places with the greatest chance of you getting one.
If you are going to make it a once in a lifetime event it is worthwhile to go with a guide so that you get access to a known place via vehicle or horse. You can also get a tag via your guide on private property that will let you get a bull tag.
Other than that, do plan on getting in good shape. Chasing an elk around the mountains is strenuous business.
