I'm looking for opinions about the best place to purchase wood to convert my field grade 101 to a trap doubles 101?
Any ideas?

Wenig.
However, you may do OK with just adding a higher comb and/or adjustable pad.
How big are you?

What are the chokes on the gun?
Usually "field" is Mod/IC and a typical doubles gun is Full/IMod.
Wenig makes some beatutiful wood, that's for sure.
Might want to try CHIC WORTHING too.

I'm 6'2". I added 3/4" to the length of pull and a Beartooth pad on my Citori and it fits great now.
The chokes are Full over Modified. That's what I shoot in my Citori for doubles but there is a big difference in the bbl lengths. I will have to check the patterns to see how they compare.
The 101 was my dad's. The existing wood is damaged; the forearm is cracked in two places. So I thought for about what I would pay for a new gun I could upgrade my fathers gun and enjoy it more than any new gun.
It's an emotional decision so I'm open to suggestions.

Wenig offers an onsite fitting service that is not cheap but seems to have great results. They replace the lumber with an oversize blank and then work it down to a fit while you shoot it. Thenl, once the dimensions are established, they transfer them to a blank you pick.
The 101 is a good shotgun. The fact that it was your father's is double reason to keep it up and working....
