Man my father works with has one, the extractor is broken.

Anybody know of a place that would have one? Everyplace I've tried so far is out of them.

Popperts shows an extractor for a 51 for sale. Click on PARTS and select Remington model 51 from the model list. http://www.poppertsgunparts.com (http://www.poppertsgunparts.com/). Also give Jack First gun parts a call at 605-343-9544. They carry a lot of obsolete parts that you can't find anywhere else.
