Randall offers stag as a custom option for many of their models. They can be seen at www.randallknives.com. I have a few stab handle pieces from knifemake Rob Patton. His work is excellent and he's a pleasure to deal with. His site is www.pattonknives.com.

they have a Northwoods brand Cowboy Bowie. I've dealt with him before and he's good people.
Marbles also has some stag handles on the "Ideal" (available from AG Russell) and some others.

I highly recommend the Bark River line of knives. Take a look at the Teddy Roosevelt Model.

I have a SilverStag Bowie, it's a very weel made good looking knife/ Don't care for the sheath though
