So i'm lookin at the beaut of a sig p239 (http://www.auctionarms.com/search/displayitem.cfm?ItemNum=4252325) , but i've never seen this finish before in real life ( i think ). What, exactly, is blackened stainless?

like the two-tone look, honestly, but it seems to be a couple hundred extra. I've seen it for as much as $750.

I'm not sure why that should be. I was looking on Gunsamerica and the few SS 239s were more, but the SS 229s were not.

So I would say, shop around.

As to your original question, you MIGHT be able to get whatever it is off, but not easily. It isn't paint. You are too likely to end up with a SS slide with black still in the lettering, rounded edges and discoloration in the process.

The blackened stainless on the 239 is relatively dull and seems to hold up very well. Mine is carried daily in an unlined Desantis holster in tropical weather with no signs of wear or corrosion.

The gun is an outstanding pistol in every respect including concealablity. I would think that you will get many years of good service out of it no matter what finish you get.
