After you complete your class and fill out all necessary paperwork, plan on spending 3 hours at the Metro PD substation getting fingerprinted, photographed, etc.

Most (if not all) of the local indoor ranges (American Shooters, etc.) here in Vegas also have one-day CC permit classes.
Also note that per Clark County ordinance, all handguns must be registered (including serial number :( ) with the local police here. (This is separate from your CC permit.) No cost if I recall correctly -- just a quick background check and you will get what is commonly referred to as a "blue card" to carry with you with your gun.
