Does anyone know of a site that details how to field dress black bear or is it pretty much the same as anything else?

It's the same as field dressing anything else -- you open the body cavity and let the organs roll out.
Skinning can be a bit different, since most people want the entire hide, including paws and claws. The usual method is to skin down the hind legs, pull the knees out and disarticulate the ankles, leaving the paws still attached to the hide. Then the hide is pulled down until the front wrists and neck are exposed. The rolled hide, paws and skull inside, are delivered to the taxidermist.
