Could anyone give me a rough idea about how much bullet drop I'll get with a 175 grain bullet in a .308 going from 100 to 300 meters? I'd like to get on paper without wasting too much ammo.

Without knowing what powder and muzzle velocity it is hard to say but a rough estimate with standard factory ammo using the grain weight bullet you say with a 100 yard zero would be...
yards:
100 -0"
150 -1" to -1.5"
200 -4" to -5"
250 -9" to -10"
300 -16" to -17"

According to Federal's Ballistics program, a 175 gr Sierra MatchKing BTHP
will shoot .9 inches high at 100 yards to zero at 150 yards, and have a 12.8 inch drop at 300 yards.

In the back of my mind, I hear the TV announcer barking: ”Good evening and welcome Ladies and Gentlemen, to another round of Ballistics Roulette, where you, the audience, must guess what the crap some poster is really asking.” This is going to be unprepossessing.

Presuming it is a 308 Win, shooting a 175 GR. SIE HPBT (BC .505, SD .264) @ 800meters/sec with a zero at 200 meters

22.86 meters * * 0
100 meters * * + 0.069 meter
150 meters * * + 0.057 meter
200 meters * * 0
250 meters * * - 0.112 meter
275 meters * * - 0.189 meter
300 meters * * - 0.277 meter
