You don't brown the meat first?
I don't do much cooking, so I am just asking. Looks tasty, though.

Nope, I don't brown the meat when I do stews.
I do brown riibs before I crock pot them though.
For those who are interested, here is the recipe I created (i altered a stew recipe to suit what I thought sounded best):
3 Squirrels, pieced out (remove and debone after ~ 5 hours)
Three medium sized red potatoes, diced
One sweet onion, diced
A couple handfulls of baby carrots
8 ounces of mushrooms, halved (they are better if they are in bigger pieces) 8 ounces is once regular container at the market
1 bay leaf
1 teaspoon paprika
1 sprinkling of Sweet Basil (i may leave this out next time)
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup flour
a dash of garlic powder
a few dashes of liquid smoke
Squirrel meat in a stew to me tastes more 'sweet' than anything. I am very careful to remove all glands when I clean them so there was absolutely no gamey taste. I think the recipe could use a bit more salt and pepper to make it less 'sweet' tasting. It was really good, but reminded me somewhat of veal. In my opinion, avoid onions other than sweet onions or vidalia onions for stews. Regular onions impart much too strong a flavor that is overpowering to my taste.
I cooked this for six hours on high in my crockpot. If on low heat I would have let it cook for ten hours.
As far as tenderness... it is amazing if you have only ever had fried squirrel. It slid right off the bones.

I am so hungry. I had to cancel my meal plan at the university, just can't afford it right now. They want almost 600 a month. I've had nothing but cereal all day. I'm ready to start catching and strangling the rabbits I see around campus at night.

mmm mmm that takes me back.
dad used to make "critter stew" when i was a kid. basically the same thing, but with quail, dove, squirrel, rabbit, and pretty much any other small game that was in the freezer, seared in the dutch oven outside. he then added potatoes, carrots, onions, beef broth, and a splash of tequila. salt, pepper, and old bay seasoning, and thickened with wondra flour.

This is just a slightly modified beef stew recipe. Should work fine with deer. Actually I have a deer roast in the freezer. I could let you know at the end of this week, I will be out of town Mon-Wed for work. Deer stew might be my next Thursday table fare. :)

Well Indiana Boy when you get a little older you can give up the milk and have some nice wine or beer !! I would substitute rosemary for the basil. Yes that's a typical stew recipe good for venison and many other meats .Enjoy !!

Good to see other folks hunting squirrels.
I was out hunting with my buddy awhile back near the local nuclear power station.
