Has anyone ever mounted a sidesaddle to the butt-stock using strong Velcro, or ever seen a butt-cuff that is held on with Velcro?

BTW I hate sidesaddles and I want a ammo carrier on the stock that can be removed easily and fast if I need to shoot weak handed.

That's what I use on my shotgun; it's held in place with velcro straps.
