Sometimes when someone posts a link instead of posting www.thehighroad.org, they post The High Road and it takes you to www.thehighroad.org. What is this called and how do you do it?

It's called a hyperlink and is similar to any other type of link except that you can essentially name the link and hide the URL part of it.

When you want to add a hyperlink to a post, it will look like this:
My thread (http://www.thehighroad.org/showthread.php?t=263039). In the post it will simply look like this: My thread (http://www.thehighroad.org/showthread.php?t=263039)

As you can see, my example takes you to this thread when you click on "My thread". (And that is called a circular link. ;) )

BTW, all of the various codes are explained in the FAQ's. See this page (http://www.thehighroad.org/misc.php?do=bbcode) in particular.
