Scope ring height question

I have been working on a "project" rifle for quite a while. Everything is done except mounting the optics, and that's where I'm having trouble.

The rifle is a Savage 10FP (new w/Accutrigger) action mounted in a Choate Super Sniper stock. I have a Bushnell Elite 3200 Series 10x40 fixed power target scope with mil-dot recticle, 3" and 5" sun shades and Butler Creek flip-up caps. Based on reviews I've read, I've decided on the Burris Xtreme Tactical 2-piece bases and rings... I just don't know which height rings to get.

The choices are low (1/4"), medium (1/2"), high (3/4") or extra-high (1"). I know I want to keep the scope as low as possible, but I'm pretty sure the low rings will be too low. I've sort of decided on the medium rings, but I have to order them online. Since there is no "try before you buy" when ordering online, I figured I'd ask the gurus here before I submitted my order and (potentially) wasted $50.

As a side note, the stock does have two different height (interchagable) cheek pieces, so I can compensate for some scope/ring height that way too.
