I'd like to have a 2" barrel on my SP101. Kitchen table or leave it to a good gunsmith?

Leave it to a good gunsmith. Better yet, sell it and buy one in the barrel length you want.
Swapping a Ruger or S&W revolver barrel is very difficult and requires the correct tools or the frame will be damaged. It is stuck in there good. I would not trust it to just any gunsmith. The factory will do it for a price.
If you want to have it cut down you can do that but you might as well buy a new one given what used SP101s go for.

I knew it would be beyond Kitchen Table stuff, just testing the waters to see if it would be cost effective or not to have it done.
I'd really like to keep this gun, the triggers worn in just right. Problem is, holsters for a 3" are hard to find.

Kramer (among others) can make one, and their turnaround time is better than most.

"...holsters for a 3" are hard to find..." Midway sells a Bianchi 5BHL for $73.99. Uncle Mikes makes one too.

Custom holster makes will make anything you want. The kydex makers will do it for an affordable price.
