After I order and install my new Hastings barrel, I plan to have my 870 fitted to me. In general, about how much should I expect to pay for this service?

Well, there's the cost of the plastic surgeon, then there's the cost of the hospital, operating theater, long-term recovery...

Depends on what you need done. Just adjusting LOP is pretty straightforward and probably no more than $50 max if you just need spacers. If he has to cut wood to shorten it it depends. It cost me about $160 (parts and labor) to have an adjustable butt plate with Kick-eez pad put on my 391.

A suggestion....
Grab some masking tape,cardboard or moleskin, some ammo and hie thyself out to the,gulp, PATTERNING BOARD!
Fire patterns and add stuff until you're satisfied with the results. If more drop is needed(rarely), take off the pad, loosen the stock, shim at the top of the rear of the receiver, and put it together again. Less drop, shim at the bottom. or build up the comb a bit, but be sure the cardboard is only on top, cast can be affected otherwise.
Once your patterns are where you want them(I like 60% of the pattern over POA), shoot some clays and adjust if needed. Use the tightest choke tube you have to better read the breaks.
That last may need 'splaining. if you hit a clay and it shatter into bits, the center of the pattern hit the center of the clay. Excellent! But if you hit it and a large piece flys off, you can tell it was hit on the opposite side(Big piece flies left, you struck it on the right), and adjust your mental picture accordingly.
Once you have the thing dialed in, measure the various items and WRITE THEM DOWN. Now, you know what it needs and a smith can make it so for a reasonable sum, or Wenig et al.
