What tells you in the serial # what the year is? I have 2 of them 1 fired maybe 100 times another unfired.

Nothing in the serial # itself indicates a year. The Std Catalogue simply lists the serial ranges for each year for every S&W made. It's a nice reference.
Sounds like you have some very nice pieces, there. Unfired, would be like "As New in Box" condition, and would run $1,000, or more, depending on your local pricing. If it doesn't even have a cylinder line (that little wear mark running around the cylinder), keep it that way! Cocking the gun and/or dry firing it will put that wear mark there, and would reduce it's value.
If the other (shot 100 times) is in excellent condition, it's valued at $800.
It doesn't say what kind of premium the 3 1/2" barrel adds, but it could be significant. Check out 27-2's on gunbroker.com to get an idea of what they're fetching.
