I measured my Savage 10FP OAL etc.

I got my Sinclair tools to measure my chamber and my max OAL.

My Speer Reloading manual says that max cartridge length is 2.015" with the Trim-to length being 2.005"

The Sinclair tools say my chamber length appears to be 2.043"

My max OAL is 2.889" with Speer saying that Max Cartridge Length is 2.810".

What would you advise as a good OAL to start from for my next batch of reloads?

Well, don't let your brass get longer than 2.015" for starters.

Max OAL doesn't mean much... Do you want to retain the capability of using the magazine?

Can I assume that 2.889" is your "bullet jam" length, using the particular lot of bullets that you measured with? That length _will_ change when using different brands/lots.

Suggest that if you want to use the mag, load to max magazine length, then work up a load. At a little from the hottest load, start moving the bullet into the case 0.005" at a time, and see how it performs as you do this.
