Rabbit recipes

I went out rabbit hunting yesterday and only got one, but will be going next week for more. The search isn't working for me, so anybody have good recipes for rabbit?

Be sure to check hare as well as rabbit. Also note that rabbit works well in most chicken recipes. Jack rabbits (hares) tend to be tougher than cottontails and other true rabbits, and work better in the slow, wet braising and stewing recipes. Hasenpfeffer, jugged hare, is the classic.

We mix the large rabbits up 50/50 with regular beef stew. You fix it the same way as the beef stew and you really can't taste the difference (although there is a slight difference in texture).

Dredge in flower, fry slowly like you would chicken, make fried taters, make gravy from the rabbit fryins. Enjoy.

Larger rabbit, either smother (in gravy) or with dumplings or what not. Just substitute rabbit for chicken in most recipes. Fry the younger ones, MMMMMMMMMmmmmm.

Grind it, mix it with a bit of ground pork, sage, fresh garlic, and rosemary. Roll into small balls and pan fry in olive oil. Toss with olive oil over pasta. Ummmmmm:)

Ten mins. in the pressure cooker, pick the meat off the bones & cut across the grain ,then treat it like hamburger. Makes good chile, tacos, etc. jim

That sounds like something good to do with a jack rabbit. Cotton tails are too yummy to grind up like that.

A quick search on www.cooks.com for rabbit turned up 243 recipes. Something there is bound to appeal to you.

My kids love snowshoe hare in the crockpot with lots of tatoes, carrots and chicken stock. Use lots of taragon for flavor.
