It seems as though I have come across information online at some point that indicated Colt had used Uberti's manufacturing for their later generation SAA's (while Colt would fit/finish/assemble and stamp the pony on them).

For anyone who knows for sure: Did Uberti ever, or do they currently, manufacture the 1873 SAA revovlers for Colt?

They did not make SAAs for Colt. There are rumors about the Colt Cowboy economy model revolver being made abroad or assembled from imported parts.
The "Second Generation" of cap and ball revolvers were made in Italy, finished in the USA, some say by Iver Johnson.

The Cowboy's frame was cast in Canada.
