I'm doing a Mall Ninja Campaign for GURPs with some of my friends, and I'd like some more information about them, if possible.
do they fight an evil organization? (like SPECTRE or something)
What do they usually carry in terms of equipment?
what kind of places do they hang out in when they get off work?
What kind of skills do they need?

Actually, I've already poked around there pretty throughly, but none of the questions were answered, except the equipment one, and then only for a couple individual ninjas. :)

What I heard was that the mall ninja is the guy who makes specail weapons. Everybody was making fun of him for making jam-o-matics, so he started posting stupid stuff from his alterego-the mall ninja.

The Mall Ninja arose from an infamous posting over on Glock Talk, IIRC. A security guard at the Mall of America posed the question of whether it would be a good idea to tape an extra trauma plate to his back in case a sniper shot him there with a .308! I'm sure you can find the thread on Google or someone will repost it here. It's extremely funny.
Here it is. The original Glock Talk thread from Gecko_45 (aka "The Mall Ninja") that started it all.
This is pretty funny--
"It's okay for me to talk about my job, as long as I'm not specific. I am the Sergeant of a three-man Rapid Tactical Force at one of America's largest indoor retail shopping areas. Although there are typically between fifteen and twenty normal security officers working the beat there, we decided a while ago that it would be best to have a specilized force for violent individuals. We use modified electric vehicles and can be anywhere on a given floor within eight and a half minutes.
Naturally, the regular security people are unarmed. We "RTFers", by arrangement with the local police, carry high-strength OC spray and batons. If we have a full tactical alert and permission from the local LEOs we also have a Mossberg 500 with less-lethal rounds and two K-frame Smith .38s loaded with 158gr. LRN.
Basically, the situation is that we get the call, we lock up the situation, put everything five by five, and cordon the area until the local authorities arrive. We're cops, we just don't get the glory. "
Here's where the "Ninja" moniker came from:
"I am a Master of three martial arts including ninjitsu, which means I can wear the special boots to climb walls. I don't think any of you are working as hard as I am to be prepared. "

1. "The Mall Ninja" as we know him on the forums is not real. He is a character played by several members on different forums. In real life, Gecko45 is a somewhat goofy but quite affable young man who likes battle rifles.
2. As far as I know, there is no connection between the guy from Special Weapons and Gecko45. The Mall Ninja talked about using Special Weapons MP-5 copies because that was a bit of an in-joke at AR-15.com. That led to some members there speculating that he was the same guy. Apparently the SW guy also has a habit of trolling and saying weird stuff.
3. Remember, kids:
"If taking multiple rounds of .308 in your back is Plan A, you need a Plan B."

There is a poster at GT that is going by the moniker "Geko45". He claims to be the original mall ninja, but can't remember his password for his old account.
