I looked around at Sporters Express but can't seem to find a new m48 stock that will fit a #7 Contour barrel. Everything I've seen so far has been a #1 contour.

So my question is, do I have to take a #1 contour and trim it out to fit a #7? Is that possible, is there enough wood to the stock to do that?

Or do I need to keep looking for a higher contour barrel'd stock to use?

A #7 barrel is a VERY heavy barrel. If I were putting a #7 on an M48 I would look at the Boyds Target/Varmint stock. I see that Sporter Express has these cut for the M48 action. http://sporterexpress.com/?p=browse&i=0002&ii=0008&iii=200-146

This barrel channel can be opened up for the #7 contour (and the forend is beefy enough to support the wheels that you will need to tow the rifle behind your truck).

Yeah, It's a McGowen... and according to their website it's like 8lbs!

I was just looking into it, my Gunsmith recommended it but I told him I wanted a gun I could hunt with - not just bench shoot. I think he went with the benchrest concept.
