What is the name of the revolver function where the cylinder ejector, pushes out all the spent cartridges at once?

Extraction or Ejection, either describes the function you are looking for.

I am trying to find out if the S & W Model 617 revolver in .22LR, ejects one cartridge at a time, or all 10 rounds at once.

Perhaps check to see if it has a "star ejector" or "star extractor"? The difference between the 2 methods you describe is the single-ejection style just uses the ejector rod as it is lined up with each cylinder by hand. The method you're looking for uses an ejector star to snag the rims of all the cartridges at once.

My best guess as to what to look for specifically...

This is simpler: If the gun is Double Action it ejects all at once. If Single Action, then only one at a time. The sole exemption is the NAA mini revolver where one must remove the cylinder completely to eject the spent cartridges, and that is a SA gun.

The S&W 617 is the direct descendant of the first Hand Ejectors of 112 years ago and as such extracts and ejects all ten cases at the same time by swinging out the cylinder and making one push on the extractor rod.

There are too many exceptions to ExSoldier's rule to make it a reliable judge.

The question was answered - FYI for the O.P. I have a 617 w/6" Bbl. with the 10 shot cylinder. Nice quality top of the line for a .22 RF
revlver, a tack driver, The 6 shot capacity 617s are now out of production. It's the same medium (K) size frame as the 1rst Model
Hand Ejector model of the 1899 era - the first gun chambered
for the new then .38 Special.

"Simultaneous ejection"

If that doesn't work, try Googling "Premature Ejection".

My Iver Johnson Target Sealed 8 is a double action revolver and loads similar to a single action except there's no gate for the slot in the recoil shield. The cases have to be pushed out one at a time with whatever you brought along that fits and is long enough. So I suppose there is at least one more sole exception.

Of course they do say there is an exception to every rule. :) ;)
