On the P-01, does the seer only engage one side (Right side) of the hammer when fully cocked? Seemed on my RAMI (That I no longer have), the seer engaged both left and right side of the hammer.

That is correct. On CZ models with the decocker, the right side hammer hook is longer and is what engages the sear when the hammer is fully cocked. The left side, shorter hammer hook, is configured to engage the decocker lever.
Take a look at it when you initially decock the pistol, before the hammer falls, and you'll see the interior decocker mechanism lift the sear then, when the hammer trips, it lodges under the left hammer hook and "cams" the hammer down to half cock when the decocker lever is released.
