Leave it together.
The plating shop will dissemble, polish, plate, reassemble, and test for proper fit of all the parts after the plating build-up.
If you leave it bare metal, it will eventually rust no matter what you do.

Well, I never heard of using hot sause to remove blue! I have cleaned brass in sugar free Kool-Ade, but the hot sauce trick is a new one.
Many food items contain enough acid to damage blue. Fruit juices and blood are rough on blued finishes, as is anything containing vinegar, (which is probably why the hot sauce worked). The Kool-Ade trick works on cleaning brass because it contains so much citric acid. I some times clean grungy brass in a citric acid solution, and it works quite well.
Boric acid is a classic blue remover. I recently used a product called Evaporust, and it worked quite well. I am not too sure of its ingredients, but the MSDS looks very user friendly.
To make things more complicated, acids can also be used in the bluing process. Most rust blues contain acid. Some even recommend urine for rust bluing, though I have not tried that one.
