I got my first computer in '93, and shortly afterward bought a modem that included some Prodigy software. I joined Prodigy, and eventually found my way to its Shooting Sports Bulletin Board. At that time, it was moderated by Dean Spier, and there soon developed a small crowd of "regulars" at the SSBB. In the summer of either '94 or '95, Dean decided to host a get-together of any of the SSBB regulars who wanted to join in for a weekend of shooting and camraderie. He termed it "Gunstock-Summer of Lead." The tradition lived on until '99 when the last "Gunstock" was held. AFAIK, that is the first use of that term in that context--but I wouldn't be surprised to learn that someone else had thought of the idea even earlier.
