I'm looking at getting a new concealment holster for my Sig. I currently have a De Santis tuckable that I feel sits way too low for me to draw my gun in a timely fashion (the grip rests a little below my belt line), and I'm looking at the Comp-tac minotaur holsters. I like the fact that I can purchase another holster part of it for my 1911 and any other guns I may buy in the future, but how well does it conceal, how high does it sit, and how comfortable is it?

Most Comp-tac holsters (IWB or OWB) ride to where the trigger area is level with the belt, though on the adjustable holsters (such as the CTAC and MTAC) you can adjust the ride height and cant.
I carry a Glock 29 in an MTAC. I carry everyday for more than 12 hours at a time and most of the time I don't notice it. It conceals well with the right attire (which also depends on your body shape). The MTAC and CTAC are designed to be tuckable in case you need the extra bit of concealment. I've also carried a fullsize 1911 and a Glock 21 in an MTAC with success.
One complaint I've heard from new MTAC users is that the draw isn't as smooth as from a pure kydex holster. At first, this is the case, but once the leather backing conforms to the firearm, the draw improves dramatically. Case in point, I can draw and reholster my G29 with no drag whatsoever because the leather has formed itself to the Glock (and my body, since I carry in the same place).

The MTAC is totally adjustable, the belt attachments connect to the holster with one of five different holes, so you can adjust ride height and cant, as well as tuck it in like whatbrick said. I love my MTAC, I actually switched my primary carry because of how good the holster is. I have been using my MTAC for USP Fullsize for my FNP9-M and it has been working perfectly. Draws well, conceals wicked nicely, very, very comfortable.

I carry my 226 in a M-TAC daily.
It absolutely disappears under anything. Paired with a $25 5.11 Tactical leather gunbelt, makes a full size SIG feel like a subcompact polymer.
Whole combo was less that $100.
