is cooking on the stove as I type this, in a big batch of chili. Been in the freezer for two years. My buddy shot it almost exactly 2 years ago in Colo. Had some of this elk about a week ago and it tasted great and I feel fine. No freezer burn either.

So what's the oldest meat you've ever eaten (that's been frozen)? Dang it smells good. Note to self: Don't chop jalapenos with a cut on your finger. :mad:

As long as the meat was well wrapped and was kept completely frozen, two years isn't a worry. I ran across some (Wyom.) elk steaks in my freezer which were four years old. Somehow, they'd got pushed into the rear of the freezer and we missed them. Tasted great!

Secret is good wrapping and well frozen.

I've had meat that was a few years old, can't tell you how old....it was fine. So long as you have your meat vacuum sealed or wrapped well it will last a long time.

What's the best wrapping? These were wrapped by a processor in butcher paper only. My belly is full - delicious! :)

I have had nothing but fantastic luck with vacuum packing...prior to that, always did OK with double-wrapping in butcher paper, but laying out all the paper and lining the edge of the counter with tape took quite a bit longer (cheaper, though!) Addendum to note: Do not rub eye for the next three days after cutting up jalapeno pepper!

I ate a 7-year-old package of antelope steaks once. They were a bit freezer burned but still edible. I would do it again.

Hint my uncle died of stomach cancer the doctor told our family it was due to eating bad meat, deer steaks he ate in his freezer. NO BS

I double wrap . . . first in heavy plastic wrap, then in freezer paper. Have rarely encountered freezer burn/taste, but 2-years is about the longest anything lived in the freezer.

typically, my game meat never makes it longer than 12-13 months. however, we just ate the last of a moose that was shot in '06, which makes it the oldest meat i can recall ever having eaten.

the elk we are working on now is going on 2 weeks, now (archery season)... rifle season opens up in 2 more weeks, so i am anticipating a loaded freezer to see us by until next year.

well, on a positive note... the 2-week old elk in the freezer got lightened just a bit tonight.

worcestershire sauce, heinz 57, a little black pepper and overnight in the fridge... wrapped w/ bacon, and tossed on the barbecue for a bit made for mighty fine eats tonight...

my kids don't know how good they got it... they get steak almost every night. my oldest daughter's old favorite, antelope, has been replaced by moose. my youngest daughter's old favorite, deer, has been replaced by elk. both will take venison over beef every time. neither will eat duck or goose though - neither will my wife... i'm sure that's because i don't know how to cook that stuff... that's ok - deer/elk/antelope/moose are far more fun to hunt than geese!

I had some wooly mammoth that had been fozen for a couple million years. It was great.

But, Seriously every time I go to my grandfathers house I eat some of his deer sausage from about 4 yrs ago. Tastes great.

Butcher paper is key.

Last night was venison tenderloin that was about......4 days old :)

Two years is the longest any meat has lasted in my family's freezer....
