I'm interested in taking an introductory course in knife fighting, and would appreciate recommendations from those more knowledgeable than I.
I'm 48 and in good health. I've studied a couple of martial arts and am an avid rifle and pistol shooter, but would love to develop my knife skils beyond just dressing squirrels and carving the Christmas turkey.

I've got to second the Insights (www.insightstraining.com) reccomendation. Greg & Co. offer absolutely top-notch training. I first took their Defensive Folding Knife class back in '98 and loved it. I haven't gotten to take their Level II DFK yet, but I hope to this year or next.
Obviously, I'm a little biased, but I think OPS (www.optionsforpersonalsecurity.com) does a pretty fair to middlin' knife class, also.:)
Another school who offer a knife class that I've heard very good things about, but have not attended, is TDI (www.tdi-ohio.com), John Benner's school out of Ohio.
All three of the above schools offer integrated programs (empty hand, gun, knife, stick, etc).
Steve Tarani, a mobile trainer specializing in edged & impact weapons, offers extremely competant isntruction also. His website is www.contactdefense.com.
I'd also suggest that you look in your area for a martial arts school teaching one of the Filipino Martial Arts. FMA are the way to go for long term blade training, in my opinion.

A third vote for Steve Tarani. Steve, aside from being an exceptionally knowledgable & skillful instructor, is a serious student of of works in the real world.
He is also, from my week worth of experience with him, is a genuinely good guy.

Tactical Defense Institute in Ohio offers very good classes in pistols, rifles and knives.
My wife and I have attended several of their classes and always look forward to returning.

All you need to know. Greg Williams can tailer a course to do whatever you desire. He can incorporate your martial arts skills into a good knife defense and add firearms into your arsenal if you desire.
I highly recommend him for any type of self defense training.
