No real reason, just like to use different ones.
How big are they? They are about 3 5/8'' Closed.

The burl one is incredibly beautiful. They're all beautiful, but that one is especially so.

I do use stainless ( ATS34 Rc. 60 - 61 & cryogenic quenched )
Sorry to say, but I do not plan on using any carbon steels. - :(
