If I replace the collapsible stock on my carbines with A1 Buttstocks, do I have to restake the receiver extension end-plate?

Do you mean the recoil plate? The recoil plate of the M1A1 stock is part of the stock, and is different from the regular recoil plate. The regular recoil plate stays with the regular stock.

Anyways, he said to check that the receiver extension end-plates are properly staked to the stock. As I'm changing out the collapsible stocks on my Colt & LMT for A1 buttstocks, I'm getting concerned that I might need to restake them or something.

Ooops. What carbine are we talking about? From the statement about an A1 stock, I assumed (yes, I know what it means) you meant an M1 Carbine and an M1A1 folding stock.
I now realize you mean the M4 carbine with the collapsible stock. Yes, you should stake the end plate to keep the receiver extension nut from coming loose; IIRC there is a place on the nut specifically for the stake.
