I have a new Kimber Pro Carry II 9mm (4") in Stainless. I was thinking about getting a Blued slide also. Kimber said they do not sell slides seperately. Are slides interchangeable (same caliber of course). and where would one get a different slide?

Doesn't sound like an especially good idea to me.
The slide & frame rails, barrel, bushing, etc., wear in together during the initial break-in, and that helps the gun run smoothly & reliably.
No two slides are going to match up exactly with rail mating from wear, barrel lock-up, etc.
It's about like having two sets of pistons for your car engine, and you use one set for Sunday and the other set the rest of the week.
