Fitting adjustable butt plate to Citori 20ga

I've put on an adjustable butt plate on my wife's 20ga Citori and there is about a 1/4" of the overhang on either side of the stock. I am planning on scribing the butt plate then using a bench grinder to remove the extra material. Does this sound feasible or is there another more specific tool to do the job?

Yes.
Bench-mounted disc or belt sander, using an adjustable jig made for the purpose (can't figure out what it's called).
