I am having a bit of trouble finding a scout scope or a scope with extended eye relief. Would it work to buy a handgun scope and mount it on a rifle scout style??

Yes, it will work.

Both Leupold & Burris make scout scopes though.
They shouldn't be that hard to find.

would a pistol scope be able to handle being used on a rifle?

Most certainly, if it is a good brand name pistol scope.

Magnum handguns develop way more recoil G-Force then any rifle.

BTW: I have a Leupold M8 pistol scope in a scout mount on my Marlin .44 Mag carbine.
