Been looking at Colt type "1860" .44 Cap and Ball Revolvers...and I do not remember seeing any which do not have the 'Cut-Out' and Extra-sticking-out Screw-Heads for a Shoulder Stock.

Are they not available 'plain'?

I think the civilian models don't have this cut-out, like this one at antiqueguns.com

Only the first Colt 1860's had the four screw frames, if memory serves me correct.

Most of the ones that you get from Pietta are the military model "so to speak" that has the cut out & the extra scerws for the sholder stock, I think Uberti offers it both ways.

I found a civilian model listed on the Uberti web page

but I have not seen one to handle. I have seen the 1851 civilian model so they can probably be ordered.

You can find them with or without the shoulder stock cut and fourth screw. I see more with than without. I don't recall reading about build numbers on the originals, if all military models had the cut or not.

There are four versions of the 2nd gen 1860, three with the cut, one without.

Of original 1860 Armies, most had the fourth screw and recoil sheild cut for the shoulder stock. The un-cut, Civilain models are in the minority. The fluted cylinders were only on the first year of manufacture.

Cimarron lists the Uberti Civilian Model 1860 on their web page. As does Texas Jacks and Buffalo Arms
