So I've been working the action a lot on a used 500 I picked up, keeping it clean, working it, and working it again and again. It's smoothened out a lot. It got to that sweet sopt I like where the action will close with the weight of the gun when holding the forend. However the extractor screw keeps comiong loose. It could be I didn't have it tight enough, but it also could be what I hope it isn't, that the thread is stripped. it LOOKS fine...

There is always Loctite.

+1... try some medium strength thread locker. NOT the heavy duty stuff or you'll need heat to get it loose.

The blue will do fine, correct? I'm only concerned because it's never happened before to me.

Same thing happened to my 500 the first few times I shot it (this was every...3-400 rounds). Appears to be a common problem in older guns. I used some blue loctite, I've put about 1500 rounds through it since and no problems - works fine now.

I'd recommend that you use blue loctite (semi-permanent) instead of red loctite (permanent) just in case you need to strip the receiver at some point.
