Personally, I would go with the 500 every time. The 835 is great if you like an overbored barrel and 3.5" capability. I believe the Maverick is a cheaper 500 with a different safety arrangement and a few other differences. One thing I love about the 500 is the tang safety. It is just natural to me. That said, if you are looking to put a pistol grip on it, that tang safety sucks...you have to completely ruin your grip to actuate the safety. Perhaps if you stated the intended uses of the gun, people could be a bit more helpful. The 500 and Maverick are great general purpose guns and the 835 is more of a Turkey/Duck gun. Slugs and the 835 don't go too well due to the overbored barrel.

If your heart is dead set on a Mossberg, for the purposes you stated, I'd go with the 500.

The 500 can and will handle bird and deer just fine. Get a rifled barrel for slugs and a 28" Ventrib for the birds. You would have your bases covered for not a whole lot of dough. Mossberg also has a new(ish) model out that is chambered for 3.5" loads.

I just looked and Mossberg calls it the 535. You can buy them in just about any configuration you could ask for. Like I said, they are fairly new so you might want to do some research on them. Just remember that you will see most of the bad reviews and few of the good ones.
