I want to have a Savage rebarreled to 257 Weatherby. Would there be any issues with this and if not, which Savage would be best to get.

Look at the Shaw rifle. It is a Savage action, and available in .257 Wby.
the basic model is $675 which is less than you could buy a Savage and have it rebarrelled for. See www.ershawbarrels.com.

Comparing the ballistics I have a hard time understanding the reason for deviating from the more standard calibers. To me, a 7mm-08 is an oddball. :D But some people love that stuff so more power to 'em.

As far as Savage goes, I stopped poo-poo'ing Savage when I saw guys at the range shooting 1 MOA groups with run-of-the-mill 110s and 114s and cheap scopes. I have heard that the newer 114s and 116 stainless models with the accustock and accutrigger are even better. When you can buy a very well made rifle for around $400and take it right to the range and pull it out of the box and shoot a couple of sub-one inch groups with factory ammo, that is impressive. They've built a pretty solid reputation the last few years quietly delivering high quality, American-made weapons at reasonable prices. They've certainly earned their current success. Even their $260 Stevens model 200s are pretty kick-ass. Savage is doing it right.

I'm aching for a stainless 116 with the muzzle brake in 300 WIn Mag or one of their 10FCPs (tactical fluted model in .308). I haven't shot either of them but I handled them at the local shops and they feel pretty sweet.

To clarify ... just because I have a hard time understanding the additional expense and aggravation that uncommon ammo choices sometimes bring doesn't mean it isn't hugely interesting and a whole lot of fun for other folks. If I was into handloading I'm sure I'd be experimenting with all kinds of things, I'm sure. As an engineer who can never resist the urge to dabble I tend to get caught up in stuff like that.

Thank God I haven't gotten the handload bug yet, though. So I'll take a Savage 116 in 7mm-08 over the 257 WM so I can buy ammo from Dicks or Wally. :D

Savage is building me one in 6.5 Creedmoor. They are actually using a Shilen heavy barrel.
