I never see them for sale at other vendors. Why is that?

Because they usually sell them for much more than the CMP does. Why buy something for $400 more at a dealership when you get great service online? On occasion you can find one at Big 5 or something but they are $1000 and they look like crap.

There are a few M1's around in shops and gun shows, but folks hold onto the good ones. What you do find are usually over priced for what they are.

Because they were made by or for the government, and the CMP is the only vendor of ex-government M1s

The CMP is the only major source of surplus M1s. The .gov owns the supply, and they release them via the CMP. Most foreign sources of M1s are countries that we lent them to, and when they finally decide they don't need them anymore, they give them back to the US gov, which then releases them via the CMP.

Most other types of rifle (mosin nagant, K31, etc) are sold by the governments that own them to private surplus arms sellers, which is why you see them distributed via many retail and wholesale outlets.

There are other resellers of M1s, but they're mostly re-selling guns that they bought from the private market.

CMP is both an exceptionally well-run business and the best customer service business with which it has ever been my pleasure to interact. I have 2 new condition rifles in new walnut stocks, their so-called "Service Grade Specials" (1 SA, 1 HRA) and 2 "Correct Grade" SA rifles, both measuring <1 MW, <1 TE. Metal is all "Collector" grade with furniture that's somewhat rough, hence only "Correct Grade". I use one of the Correct Grades as a shooter...it's good to 1.5-2 MOA with Hornady Match Grade (for M1 Garand, 2700 fps) ammo.

My dad, uncle and two cousins bet their lives on M1 Garands in WWII and Korea...I'd do the same today. These four rifles are commemoratives to each of them.
