I know next to nothing about old smiths, but near as I can tell it is a 2nd model hand ejector with mop grips.
How can I tell if they are "real" pearl.

The quote from Patton was funny, but not very helpful. I have no idea how you can identify real pearl. Perhaps a jewlery store could be of help?

If you really need to know, you could try this, but be very very careful.
Remove the grips from the handle. Find a place on the inside that you won't care if it gets scratched...take a small amount of CLR or other lime removal liquid, less than a drop if you can, and apply it to a spot on the inside of the grip. If the grip is truly "Mother of Pearl" the CLR will dissolve the surface of the grip where contacted. Rinse the grip off ASAP.

One test that is pretty reliable is called the tooth test. Run the pearl or mother-of-pearl along your teeth. Real pearl will have a gritty abrasive feeling. Fake stuff will be smooth.

They are real pearl then.
I think I love this gun. Problem is it is not mine. A freind's mother owns it. How much would be a fair offer for it?

Yup, it's an early .44 Hand Ejector, 2nd. Model - porbably made around 1916, although it could be several years later because that's when World War One came into the picture. Listed book values are:
Good $400.00
Very Good $575.00
Excelent $800.00
Deduct substantially for a pitted bore or chambers.
Nickel finish was a bit unusual but not rare on this model. I think the grips are real pearl.
