Sir, it depends on whether you want an historical guide, a functional guide, or both.
General Julian Hatcher's "Hatcher's Book of the Garand" details the development of the M1 (and competition) and also has a lot of details on setting the sights, troubleshooting, etc.
Bruce Canfield's Book, which includes info on the M1 Carbine as well, is a good historical overview.
Duff's WWII Garand book gives a great deal of detail on production, including a lengthy list of rifles that are known original or correct and all their part details, which hels you understand how "correct" your rifle might be.
Kuhnhausen's shop manual has a lot of technical details not available elsewhere.
If you have trouble finding Hatcher's book, it is stocked at the SANHS. It may also be available through the NRA as well.
Hatchers is my vote, hands down. But if you are into collecting Duff's book is essential.

From the collector/historian standpoint, Scott Duff's books are excellent. I have Duff's Post-WWII book, since my M-1 is a 1955 vintage International Harvester.

In addition to those listed above, for just light reading (mostly just looking at pictures) try this inexpensive book:
http://www.midwayusa.com/midwayusa/applications/mediasvr.dll/image?saleitemid=287036
"The M1 Does My Talking!: the US M1 Garand Rifle in Pictures" Book by Robert Bruce
Available from MidwayUSA for about $13, and CMP for $10.
Enjoy!
